As the train rolls through Sweden, many travelers want to do more than just get from point A to B. They want to take a break, enjoy something delicious, and feel that the food they eat is prepared with care. At SJ’s bistro, the ingredients are an important part of the experience – and for over ten years Bjärekyckling has been an obvious ingredient. Behind the collaboration lies a shared vision of quality, sustainability, and good food.
Swedish raw material is crucial
When SJ decides on its food offerings, the choice of raw ingredients is an important issue. For them, it is of course essential to use Swedish raw ingredients of the highest quality wherever possible. It is about both taste, safety and how the animals are raised – ingredients that you can trust and that leave a good aftertaste, even after the journey.
Therefore, the choice fell on Bjärefågel and our Bjärekyckling. It was the start of a collaboration that has continued for over a decade. During that time, the collaboration has evolved into an open and smooth dialogue.
– I feel that we have a very good and open dialogue. It is easy to reach out and be heard, says Johan Hallström at SJ.
Bjärekyckling in bistron's favorites
Today, Bjärekyckling is featured in several of bistron’s dishes, including the kebab roll, salad bowl, wrap with Korean BBQ sauce, club sandwich, and bulgur and kale salad with basil cream – as well as in several of the meals served in first class.
The food is produced by SJ’s food partner Picknick, which ensures that every dish works just as well in the train’s kitchen as for the traveler at the table.
Open, honest and happy food
SJ describes its food philosophy in three words: open, honest and happy food. Bjärekyckling fits naturally into this.
“It should be food that reflects today’s Swedish food culture, with ingredients and handling that are sustainable for both people and the environment – and dishes that inspire and leave a lasting impression,” says Johan Hallström.
When SJ describes what they want the traveler to feel when the food is served in the bistro, the answer comes in three words: surprise, food delight and security.
– That’s where our worlds meet. We are passionate about raising Sweden’s best chicken – and are proud that it gets to accompany travelers on their journey through the country, says Per-Olof Ingemarsson, CEO of Bjärefågel.
