Bjärefågel is now launching Collagen Broth, a natural broth cooked with chicken bones and skin from Bjärekyckling. The product, intended to be enjoyed on the go, is the next step in transforming hidden resources in the food chain into delicious and nutritious food. Collagen Broth was developed in collaboration with Axfoundation and Pressbyrån PBX.
Raising animals requires a lot of resources, and not using the entire animal is a huge waste. Today, large parts of the Swedish chicken that could have been used as food are converted into animal feed or biogas instead. The shells, bones from the thighs and necks, for example, account for about 18 percent of the chicken. By using these parts for, for example, broth, more of the chicken can be utilized in food production.
– PBX is Pressbyrån’s innovation hub for testing new solutions and challenging the industry. After Pressbyrån’s launch of the bloodbrownie, we are now continuing on this path together with Axfoundation and Bjärefågel. With Collagen Broth, we want to, together with Bjärefågel, show that what is sometimes mistakenly seen as waste is actually a fantastic and nutritious raw material, says Anna Wallenberg, CEO of Reitan Convenience Sweden.
Deep concern and quality in focus
The broth is based on slow-growing Bjäre chicken of the Hubbard JACY87 breed. The chickens are raised for 49–52 days on smaller farms mainly on the Bjäre Peninsula and in southern Halland. The animals are fed a vegetarian, GMO-free diet.
– We work hard to use the whole bird, and today we are making use of almost 100 percent of the chicken. Transforming the bones into a flavorful broth of the highest quality is a smart way to ensure that more of the chicken actually becomes food for people, says Per-Olof Ingemarsson, CEO of the family-owned company Bjärefågel.
A natural source of collagen
Collagen Broth is made by roasting chicken bones before combining them with vegetables. The broth is flavored with lemongrass, lime, ginger, chili, and garlic. Unlike many other broth products, Collagen Broth contains no added sugar or palm oil.
Collagen Broth is high in protein, with one serving containing nearly 12.5 grams of protein – of which 7.5 grams is natural collagen. One cup also contains only 53 calories.
Collagen Broth costs the same as a cup of coffee, 25 kr, and is sold at Pressbyrån PBX in central Stockholm from October 12th.
