Fried chicken breast with red curry sauce and black rice
Wine suggestion: Chateau Musar Red 2019, Bekaa, Lebanon, item no. 746301
After nearly four years in the bottle, the wine has reached a point where time has not only settled on top of it, but also worked its way in from within. The fruit has deepened, darkened, and refined into a spectrum of cassis, blackberries, plums, and black cherries. The herbal notes are complemented by both sage and tobacco, and move like whispers through the structure, while cedar wood and a spicy spice backbone the structure.
The creamy coconut sauce rounds off the wine's power here and captures its dark fruit, with blackberries and black cherries moving close to the soft warmth of the wine. The spiciness of the sauce reflects the wine's pepper notes, while the roasted surface of the chicken provides a light grilled depth that connects with the wine's barrel character. The earthy tone of the black rice anchors the whole and allows the wine's structure to settle, while the discreet sweetness of the polkabetan and the green bitterness of the arugula highlight the wine's acidity. The combination moves between warmth, freshness, and depth – where each component finds its place without overwhelming the others.
