  • Category: Chicken breast
  • Cuisine: Main course

Ingredients

Four people:

• 400-500 g chicken breasts
• spaghetti
• 1 tbsp olive oil
• 1 pkt bacon
• 2 cloves of garlic
• 2 pitted tomatoes
• 7dl fresh baby spinach
• 1.25 dl whipped cream
• 0.75 dl grated parmesan
• salt
• black pepper
• basil leaves (for decoration)

Instructions

1. Boil salted water for the spaghetti. When the pasta is done, save some of the water.
2. Heat the oil in a pan and fry the chicken breasts with salt and pepper. Fry for about four minutes on each side and check if they are done by inserting a fork into the meat (the juices should be clear). When the breasts are ready, slice them into strips.
3. In another pan, fry the bacon slices until they are crispy. Then let the fat drain off on kitchen paper before slicing them.
4. Remove half of the bacon fat from the pan and add the garlic, tomatoes and spinach. Season with salt and pepper and pour over the whipped cream, grated parmesan and 1 dl of the saved water from the pasta cooking.
5. Let it simmer for a while and then pour it over the spaghetti and stir. Garnish with basil and serve.

Tip: If you want to simplify the recipe and adapt it for children, you can use ready-made cheese sauce and remove the garlic.
