Ingredients

Four people:

Chicken with chili rub:
• 1 chicken
• salt and black pepper
• 1 tbsp cumin
• 1 tbsp yellow mustard seeds
• 1 tbsp coriander seeds
• 3 tbsp muscovado sugar
• 1 tbsp chili flakes
• ½ tbsp rose pepper
• 3 tbsp butter
• 4 sprigs of fresh dragon fruit
• 1 single clove of garlic
• salt and pepper

Potatoes mashed with Västerbotten cheese:
• 800 g peeled, floury potatoes
• 1 dl of cream
• 1 dl milk
• 2 tbsp butter
• 1 dl chopped parsley
• 100 g grated Västerbotten cheese
• salt and pepper

Instructions

1. Set the oven to 175°C and then start making the chili rub. Place the cumin, yellow mustard seeds, coriander seeds, muscovado sugar, chili flakes and pink peppercorns in a mortar and crush and mix.
2. Rub the Bjärekyckling with the chili rub. Then gently loosen the skin on the Bjärekyckling's breasts and fill with butter, chopped fresh garlic and fresh dragon fruit. Season with salt and pepper.
3. Place the chicken on a grill grate with a charcoal grill underneath. Roast in the oven at 175°C for about an hour, until the internal temperature of the Bjäre chicken reaches 72°C degrees.
4. Boil the potatoes until tender and drain the water. Bring the cream, milk and butter to a boil. Whisk the ingredients together and season with Västerbotten cheese, chives, salt and pepper.

Tip: serve with grilled lemon.
