4 people:
• 8 chicken leg fillets
• 4 red beets
• 6 artichokes
• 50 g of butter
• 1 sprig of dragon
• garlic
• 4 dl heavy chicken stock
• ½ dl capers
• 3 tbsp apple cider vinegar
• 1 banana shallot
• 2 sprigs of parsley
• 1 onion
• salt and pepper
1. Boil the beetroot in salted water for about 20 minutes.
2. At the same time, boil four of the artichokes in butter until they are soft and golden brown. Season with salt and pepper.
3. Cook the roasted Bjärekycklingovanlåren in a frying pan with butter, garlic and dragon fruit. Cook until done in the oven at 120°C until the internal temperature of the thickest part reaches 70 degrees. Allow to rest for a few minutes before serving.
4. The remaining artichokes are finely grated into chips and fried until golden brown. Season with salt and pepper.
5. Reduce the chicken stock and then season with melted butter, capers, apple cider vinegar and chopped shallot, parsley, salt and pepper.
6. Cut the leek into about two-centimeter-thick pieces. Blanch the leek and then sauté it in a dry pan over high heat.
7. Serve on plates. Enjoy your meal!
