Wine suggestion: Palmer & Co Brut Réserve, art. no. 7372
The mature fruitiness and nutty undertones of the champagne complement the tender and creamy texture of the chicken superbly, while at the same time it easily captures the tang from the cheese, bacon and dressing in an absolutely exemplary manner, resulting in a winning combination and a clear choice for the upcoming spring and summer.

Ingredients

4 people:

INGREDIENTS:

  • 4 Chicken breast
  • about 1 dl freshly grated parmesan
  • 2 flower pots romance salad
  • about 300 gr grated bacon
  • any bread to make croutons from
  • Olive oil
  • Salt
  • pepper
  • Caesar dressing (we bought the ready-made one, but if you want to make your own, the recipe is below)

Caesardressing
• 1 egg yolk
• 1 tbsp white wine vinegar
• 1 tbsp sardine cream or 3 sardine fillets
• 1 small clove of garlic
• 1 dl neutral oil, e.g. rapeseed
• 1 dl olive oil
• 1 dl
• 50 grams of grated cheese, like Parmigiano Reggiano
• salt
• black pepper

Instructions

Dressing:

  1. Mix the egg yolk with the wine vinegar, the pressed garlic and the sardines. If you have used fillets, crush them with a fork before adding them to the mixture.
  2. Then carefully pour the oil in while whisking. Finally, mix in the cheese and season with salt and pepper. Let it cool while the rest is prepared.

Caesar salad

  1. Chop the parmesan and set aside in a bowl. Then slice the lettuce leaves into 3–4 cm pieces and set aside in a bowl.
  2. Salt and pepper the chicken breasts and fry them in a pan over medium heat with a little olive oil until they are golden brown and crispy. Set aside on a plate and cut them into pieces just before serving.
  3. Turn up the heat to high and fry the chopped bacon until crispy. Set aside on a plate lined with kitchen paper.
  4. Slice the bread, we chose the cellar French bread, into small pieces and fry in the same frying pan with the fat from the bacon until crispy and golden brown. Set aside in a bowl.
  5. Assembly: Mix the lettuce leaves with the dressing, then add the bacon and the sliced parmesan (leave some for garnishing).
